Reykjavík Food & Fun Festival will be held from March 12 - March 16 and Vox will of course participate!
This year the chef that will lead the Vox kitchen is Tiago Rosa from Portugal, he will offer the guests a special menu where the emphasis is on sustainability and plant-based cooking featuring premium Icelandic ingredients.
Tiago Rosa x Vox - Four course menu
Chawanmushi + Cauliflower + Dashi
- chawanmushi custard / caramelized cauliflower / truffle coffee oil
Potato + Horseradish + Kale
- potato pancake / horseradish sauce / grilled kale oil
Arctic char + Sea urchin + Onion
- arctic char / sea urchin cream / pickled burnt ginger / pearl onion / Wasabi leaf
Side: onion tea infused with seaweed and ginger, topped with black pepper oil
Vegan option: Grilled mushroom / Onion purée / Icelandic Wasabi / Black pepper
Bread + Spices
- sticky bread / nutmeg and tonka bean cream / juniper ice cream

Tiago Rosa is a Portuguese chef, dedicated to his craft, currently leading the kitchen as Head Chef at Ark a Michelin restaurant in Copenhagen. Ark is known for its innovative approach to plant-based fine dining, combining sustainability with bold flavors and creative techniques. Ark is considered one of the most exciting food experiences in Copenhagen, partly due to it's creative techniques when it comes to cooking.
Tiago says: ''My vision has evolved since I started working with plant-based menus. As I’ve spent more time working with plants, I've come to appreciate the incredible variety and depth that plant-based cooking can offer. It's not about replicating animal-based dishes, but about celebrating the flavors, textures and diversity that plants provide. I like to explore ingredients and discover flavors, and I see plant-based cooking with endless possibilities for creativity.''
When asked about his goals with the food festival Tiago said: ''This menu aims to showcase vegetable-centric cooking. It is a taste of what we do at Ark, and what cooking with plants can offer. I hope that it will bring some nice surprises, and dissolve stereotypes. Being part of Food and Fun, is a great platform to showcase that vegetables are fun!''
